Mughlai Magic
Ingredients
Rice (Ruchi Wheat Rice) or (Basmati Rice) - 350 gms
Mutton - ½ kg
Onion (sliced) - 3 Nos
Ginger Garlic Paste - ½ tsp
Whole garam Masala - 1 tsp
Dry Red Chilies - 2 Nos
Ruchi Biryani Masala - 3 tbsp
Curd (Beaen) - ½ cup
Cumin seeds - ½ tsp
Turmeric Powder - ½ tsp
Saffron in - ½ up
Warm Milk - 1/ 2 kg
Ghee - as required,
Coriander and Pudina (chopped) as required
Salt to taste
Ajiramotto - ½ tsp
Method
1. Fry the Onion and grind the fried onion and red chilies to a fine paste.
2. Now marinate the mutton pieces with curd, ginger, garlic paste, onion paste, turmeric powder, Ruchi Biryani Masala, Salt and ajinamotto.
3. In a pressure cooker heat ghee, add the marinated mutton and pressure cook till done.
4. Heat ghee again in another vessel, add the whole spices, fry for a while and add the washed Basmati Rice or cooked Ruchi Rice.
5. Add salt, hot water above and cook till rice is done, Drain it.
6. Remove, spread out to cook and remove the whole spices.
7. Now to assemble, apply ghee to a heavy bottomed vessel, heat ghee than add cooked mutton and sprinkle little garam masala.
8. Cover with a layer of rice, followed by a melted ghee and then the saffron milk.
9. Lastly cover tightly and keep of slow flame or on tava which is on slow flame for 15-20 minutes. Mix and serve hot garnished with chopped coriander and pudina leaves.
Tips: ( Perparaton of Ruchi Ricce- Boil plenty of salted water then add slowly the wheat Rice sitting continuously for 8-10 mins or till done.)
Ruchi Veg Rice
Ingredients
Ruchi Rice/Star - 200 gms
Refine edible oil - 50 gms
Carrot
Green Peace - 50 gms
Cabbage - 200 gms
Onion - 50 gms
Tomato - 50 gms
Green chille - 2 pcs
(Tomato/Chill sauce preferred)
Black pepper powder - ½ tbs spn
Salt to taste
